Born and raised in Greece, Executive Chef/Partner Christos Fasseas brings flavors from the streets of Athens to one of Chicago’s most vibrant culinary neighborhoods. After training in two Michelin-starred restaurants (The Fat Duck in Bray, United Kingdom and Varoulko in Athens) and creating an innovative cocktail program at his bar-restaurant on the island of Spetses, Greece, Fasseas was drawn to Chicago as a destination for food and beverage exploration. His diverse experience includes a culinary journey that has taken him from Florence, Italy to Charlotte, North Carolina to the islands of Greece. DOX is the evolution of his culinary practice, melding classical technique with approachable Mediterranean flavors. His recipes have serious Greek street-cred, as authentic as his accent. 


The banker and the lobbyist, brothers Peter and Billy Thanoukos, put their heads together in 2011 to engineer what would become successful mini-chain, Greek Kitchen. Inspired by their father, who founded and operated Hub’s Restaurants (of the famed Saturday Night Live sketches, “You Like-A Da Juice, Ah?”), as well as their own experiences in fast-casual restaurants around the globe, they created a customizable Greek-centric menu. Now full-time restaurateurs, the brothers have tailored their quick-serve vision for neighborhood dwellers with more mature flavor profiles and an overall elevated dining experience.  It is with respect for Greek cuisine, culture and tradition that they, along with Fasseas, developed DOX Quality Greek.
